    Sparkling Lemon Gelato

    Serve this as an aperitif or, even better, as a refreshing pudding after the heat and scorch of the barbecue is over. Swap the sparkling wine for homemade lemonade for the kids. Add some berries to each glass as well if you fancy.

    • Preparation time: 15 minutes, plus 30 minutes cooling and 3–4 hours freezing
    • Total time: 15 minutes, plus 30 minutes cooling and 3–4 hours freezing 15 minutes

    Serves: 4

    Ingredients

    • 3 tbsp finely grated lemon zest
    • 250g caster sugar
    • 250ml lemon juice
    • 250ml double cream
    • 500ml sparkling wine

    Method

    1. Heat 250ml water with the lemon zest and caster sugar in a pan. Bring to the boil, stir until dissolved, then set aside to cool.
    2. Whisk in the lemon juice and cream. Strain through a fine sieve into an airtight container and churn in an ice-cream machine, then transfer to an airtight container and freeze overnight. (Alternatively, freeze the mixture for 1 hour or until crystals form. Beat well and return to the freezer. Repeat this process two or three times, then allow to freeze overnight.)
    3. To serve, whisk 4 scoops of gelato with 200ml sparkling wine to break them up a bit, and divide between 4 chilled glasses. Add another scoop or two of gelato to each, and carefully top with the remaining sparkling wine until frothy. Serve immediately.
