    Sparkling Wine Jelly with Pomegranate

    This pretty jelly is a perfect seasonal dessert that's sure to impress family and friends. It can be made in advance - giving you more time to relax and enjoy.

    • Preparation time: 10 mins, plus at least 4 hours chilling
    • Total time: 10 mins, plus at least 4 hours chilling 10 minutes

    Serves: 4

    Ingredients

    • 7 leaves gelatine
    • 300ml pomegranate juice drink
    • 1 tbsp caster sugar
    • 300ml sparkling white wine
    • 1 small pomegranate
    • 90g pack Bonne Maman Galettes (two biscuits per serving)

    Method

    1. Soak the gelatine leaves in a bowl of cold water for 4-5 minutes until softened. Heat 100ml of the pomegranate juice drink and the sugar in a small pan. Squeeze out the gelatine and add to the pan of pomegranate juice. Stir until the gelatine and sugar has dissolved, then remove from the heat. Stir in the remaining pomegranate juice and transfer to a large jug. Stir in the sparkling wine and allow to cool.
    2. Divide the jelly between 4 pretty serving glasses. Cut the pomegranate in half and remove the seeds. Reserve half and drop the remainder into the jellies. Place in the fridge for at least 4 hours or overnight, until set. Top with the remaining pomegranate seeds and serve with the biscuits.
