Speedy Spaghetti with Bacon and Courgette

This pasta dish with its delicious smoky bacon flavour can be ready in only 15 minutes.

Ingredients

  • 350g Waitrose Organic Spaghetti
  • 1 tbsp organic Italian extra virgin olive oil
  • 1 clove organic garlic, crushed
  • 200g pack Waitrose Organic Smoked English Dry Cure Bacon Rashers, chopped
  • 2 organic courgettes, cut into thin ribbons using a potato peeler
  • 350g tub Tideford Organic Foods Tomato and Basil Sauce (from the chiller cabinet)
  • 4 tbsp freshly grated Ferrari Organic Parmigiano Reggiano
  • ½ x 25g pack fresh organic basil, to garnish

Method

  1. Cook the spaghetti according to pack instructions then drain well. Keep warm in the pan with the lid on.
  2. Meanwhile, heat the oil in a medium pan then add the garlic and bacon. Fry for 3-4 minutes until the bacon is lightly browned. Stir in the courgettes and cook for a further 2-3 minutes until slightly softened, then stir in the sauce. Cover and simmer for 3-4 minutes.
  3. Pour the sauce over the spaghetti and toss well to coat. Divide between 4 bowls, season with freshly ground black pepper and sprinkle with the cheese. Garnish with basil leaves and serve with Waitrose Organic Gourmet Italian Style Salad.

Cook's tips

Swap the spaghetti for a different pasta shape, such as fusilli, or replace the fresh sauce with a jar of Seeds of Change Cherry Tomato and Olive Organic Pasta Sauce.

Tasty recipe which is easy to make from ingredients I always have in the home. Never use ready-made sauces, so make this recipe with my own tomato sauce made with fresh tomatoes, onion, garlic, olive oil, oregano and seasoning.

Where is the minced beef! This looks like a spendasmuchasyoucan recipe to me! Not one that i will be cooking in this financial climate.
