    Spiced Chocolate Pots

    These individual spicy chocolate sponge puddings have a chocolate fudge centre. They're perfect for entertaining.

    • Total time: 1 hour 40 minutes, including freezing time 60 minutes 40 minutes

    Serves: 6


    • 200g bar Waitrose Continental Plain Chocolate
    • 4 tbsp half-fat crème fraîche
    • 175g unsalted butter, softened
    • 150g golden caster sugar
    • 3 large eggs, beaten
    • 250g self-raising flour
    • ½ tsp ground cloves
    • ½ tsp ground nutmeg
    • 2 tsp ground cinnamon
    • ½ tsp vanilla extract


    1. Melt 75g of the chocolate in a heatproof bowl set over a pan of simmering water, stirring occasionally. Remove from the heat and stir until smooth, then stir in the crème fraîche. Spoon into a small ice cube tray, oiled, to make 6 cubes. Freeze for at least 1 hour or until frozen.
    2. Preheat the oven to 180°C, gas mark 4. For the sponge, melt the remaining chocolate as above. Remove from the heat and allow to cool slightly. Beat the butter and sugar together in a large bowl with an electric whisk until light and fluffy. Gradually beat in the eggs, a tablespoon at a time, then fold in the flour, spices and vanilla extract. Stir in the melted chocolate.
    3. Butter 6 x 200ml metal pudding pots or individual basins, then half-fill each with the mixture. Put a chocolate ice cube into the centre of each, then top with the remaining mixture, until each mould is about three-quarters full.
    4. Stand the moulds in a baking tin and cover loosely with buttered foil. Cook for 20-25 minutes until just firm to the touch. Carefully turn out and serve immediately with a dollop of half-fat crème fraîche and a sprinkling of toasted and chopped Brazil nuts.

    Cook's tips

    Use flexible rubber ice cube moulds to make the chocolate fudge centre as they make it easier to release the chocolate cubes. To make chilli chocolate pots, replace the spices with 2 tsp hot chilli powder.
