Spiced Date and Apple Cobblers

Classic comfort puddings don't get much more scrumptious than this. The dates give the filling a gooey sweetness and the cobbler topping is softer and more crumbly than the traditional firm scone top.

Ingredients

  • 2 Bramley apples, peeled and finely diced
  • 75g Medjool, Hadrawi or Deglet Nour dates, roughly chopped
  • ½ tsp ground cinnamon
  • 1 tsp mixed spice
  • Knob of butter
  • 125g golden caster sugar
  • The cobblers
  • 50g butter, melted
  • 250g plain flour
  • 4 tsp golden caster sugar
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 240ml Yoplait Buttermilk
  • Single or double cream, to serve

Method

  1. Preheat the oven to 200°C, gas mark 6. Toss together the apples, dates, sugar, cinnamon and mixed spice. Butter six ramekins and spoon in the fruit mixture.
  2. For the cobbler: Stir together the flour, sugar, baking powder, bicarbonate of soda and salt. In a separate bowl stir together the butter and buttermilk then mix into the dry ingredients to make a sticky dough.
  3. Drop spoonfuls of the dough onto the fruit then bake for 25 minutes until the crust is golden and the fruit is tender. Serve warm with cream.
