    Spiced mackerel with white beans

    Serves: 4


    • 2 tbsp essential Waitrose olive oil
    • 1 onion, roughly chopped
    • 2 garlic cloves, finely chopped
    • 4 tomatoes, chopped
    • 2 thyme sprigs
    • ½ tsp caster sugar
    • 400g can essential Waitrose cannellini beans, drained and rinsed
    • 4 fresh mackerel, gutted and cleaned
    • 1 tsp smoked paprika
    • 2 essential Waitrose lemons


    1. Preheat the oven to 200C, gas mark 6. Heat 1 tbsp olive oil in a pan and cook the onion until soft, about 5 minutes. Add the garlic and cook for 1 minute, then add the tomatoes and thyme and cook for another 8–10 minutes until the tomatoes reduce into a thick sauce. Add the sugar and the beans, stirring all the time. Heat through and season.
    2. Meanwhile, slash both sides of each fish with a sharp knife. Brush with the remaining oil, rub with paprika and place in a foil-lined roasting tin. Squeeze over the juice of 1 lemon and roast for 10–12 minutes.
    3. Check the fish to see if it is cooked through – the flesh near the bone should be opaque. Serve with the beans, a slice of lemon and a drizzle of olive oil, if liked.
