    Spiced Meatballs with Tomato Sauce

    Ingredients

    • 800g Aberdeen Angus minced beef
    • 100g wholemeal breadcrumbs
    • 2 eggs
    • 1/2tsp ground cumin
    • 1/2tsp cayenne pepper
    • 1 bunch coriander
    • 1 chilli
    • 6 cloves garlic
    • Groundnut oil
    • 680g jar of Waitrose Passata

    Method

    1. Mix 800g Aberdeen Angus minced beef with 100g wholemeal breadcrumbs, 2 eggs, ½tsp each of ground cumin and cayenne pepper, 1 bunch of coriander, destalked and chopped, and one fresh chilli, seeded and finely diced.
    2. Set this aside, then finely chop a large onion and 6 cloves of garlic.
    3. Heat a little oil in a saucepan and soften the onion and garlic for about 5 minutes then allow to cool before adding to the mince mixture. Season with salt then form into 12 meatballs.
    4. Fry for about 5 minutes in groundnut oil, then drain the fat and pour 680g jar of Waitrose Passata over the top. Simmer for about 45 minutes and serve.
