    Spiced Melon Salad

    Aromatic spices combine beautifully with the fresh, perfumed flavour of melon and, in the height of the summer, this salad makes a wonderfully refreshing dessert.

    Serves: 4

    Ingredients

    • 5cm piece fresh ginger, peeled and sliced into matchsticks
    • 2 stalks lemon grass, finely sliced
    • 1 red chilli, deseeded and finely sliced
    • 100g granulated sugar
    • 300ml water
    • 3 melons of different varieties, such as cantaloupe, piel de sapo and galia
    • ½ pack mint, finely chopped

    Method

    1. Put the ginger, lemon grass and chilli in a small saucepan with the sugar and water. Bring to a simmer and simmer very gently until reduced by half - about 20 minutes. Leave to cool for 10 minutes.
    2. Quarter all the melons, and cut away their skin. Scoop out the seeds with a spoon. Cut the melons into even-sized wedges, chunks or balls. Arrange a layer of melon in a serving dish. Sprinkle with some of the chopped mint and a spoonful of the spiced syrup. Repeat until all ingredients are used, finishing with some syrup. Serve chilled.
