    Spicy pepper & basil omelette

    Ingredients

    375g pack Waitrose Seasoned Charlotte Potatoes
    1 bunch salad onions, shredded
    6 essential Waitrose Free Range Eggs
    25g pack basil, leaves shredded
    135g pack Waitrose Stuffed Cherry Peppers
    200g pack Waitrose Pome Dei Moro Tomatoes, quartered 

    Method

    1. Heat a medium non-stick frying pan over a medium heat. Melt the butter from the pack of potatoes and fry the potatoes and salad onions for 3 minutes. Preheat the grill to high.

    2. Beat the eggs with half the basil and season. Pour into the pan and cook for 5-7 minutes. Nestle the peppers on top then grill for 5 minutes until golden. Mix the tomatoes, remaining basil and seasoning then spoon over the omelette.
