Spicy turkey quesadillas with Brie and jalapeño

2 tbsp salted butter
1 tsp olive oil + a little extra for frying
1 red onion, finely sliced
500g leftover turkey, cut into strips
4 tsp Santa Maria Chipotle Paste
320g pack Santa Maria plain flour tortillas
150g Brie, sliced
Handful of Santa Maria jalapeños
Soured cream to serve
1. Place a frying pan on a medium heat and melt the butter and oil together. Add the onions and cook for 2-3 minutes until softened. Add the turkey and the chipotle paste, stir together and heat through thoroughly for 1-2 minutes. Set aside.
2. Add a little oil to the same pan and add 1 tortilla. Add a few slices of Brie on top. Add a sprinkling of jalapeños and quarter of the turkey and onion mixture.
3. Place a second tortilla on top of the mix and, once golden, flip in the pan, you may need a plate to help with this. Once warmed through repeat with the remaining tortillas.
4. Cut into quarters and serve with soured cream.
