    Spicy, Honeyed Pecans

    Serves: 4 - 6

    Ingredients

    • 200g shelled, natural pecans
    • 1 tsp fennel seeds
    • ½ tsp dried oregano
    • A good pinch of crushed dried chillies.
    • ¼ tsp honey
    • A generous pinch of salt

    Method

    1. Heat a large frying pan over a low heat. Add 200g shelled, natural pecans and toast, stirring for 5 minutes or until they colour slightly and begin to release a nutty aroma.
    2. Add 1 tsp fennel seeds, ½ tsp dried oregano and a good pinch of crushed dried chillies. Continue to toast the nuts, stirring continuously, for 1 minute.
    3. Remove the pan from the heat; stir in ¼ tsp honey and a generous pinch of salt. Transfer the spiced nuts to a baking sheet to cool.
    4. Once completely cooled, place in a serving bowl or, if not serving immediately, store in an airtight container in a cool place.
