    Spicy, Oven-Baked Chicken

    • Preparation time: 20 minutes, plus marinating
    • Cooking time: 30 minutes
    • Total time: 50 minutes, plus marinating

    Serves: 4

    Ingredients

    • 4 chicken leg joints, skinned, and the flesh slashed
    • Chopped coriander, to serve
    • Lemon wedges, to serve
    • Marinade
    • ½ a large onion
    • 5 cloves of garlic
    • ½ a ginger root, peeled and chopped
    • 2 green chillies, chopped
    • ½ tsp hot chilli powder, or to taste
    • 1 tsp ground cumin
    • Juice and grated zest of 1 lime
    • 3 tbsp tomato purée
    • 250g natural, low-fat yogurt
    • Salt and freshly ground pepper

    Method

    1. Purée the onion, garlic, ginger and chillies in a food processor, then add the remaining marinade ingredients. Mix the chicken with the marinade, rubbing the marinade into the cuts in the meat. Cover and chill for up to 24 hours.
    2. When you're ready to cook, preheat the oven to its highest setting, and put a non-stick roasting dish in it to heat. When the oven is hot, place the chicken in the dish and cook for 30 minutes. Shake the pan half way through but don't actually turn the chicken over. When the chicken juices run clear, serve with coriander and lemon wedges. Chapattis and a tomato salad make ideal accompaniments.
