    Spicy Blackened Cod With Coriander Relish

    Mumbai has some of the best fish markets in all of India. Street food is popular and barbecued fish is sold at small beach stalls along the coast. The most popular fish is pomfret with its firm, delicate flesh, but cod works just as well in this recipe.

    • Preparation time: 15 minutes, plus marinating
    • Cooking time: 5 minutes to 6 minutes
    • Total time: 20-21 minutes, plus marinating 55 minutes

    Serves: 4

    Ingredients

    • 500g Cod fillets
    • Marinade
    • 1 tsp Garlic purée or 2 garlic cloves, crushed
    • 1 tsp Ground coriander
    • 1 tsp Ground cumin
    • 1 tsp Hot chilli powder
    • 1 tsp Ground turmeric
    • 3 tbsp Olive oil, plus extra to serve
    • Relish
    • 40g Coriander
    • 2 tbsp Natural roasted peanuts
    • 1 Green chilli, roughly chopped
    • ½ tsp Garlic purée
    • ½ tsp Ginger purée
    • ½ tsp Caster sugar
    • ½ Lemon, juice

    Method

    1. For the marinade, combine the garlic purée and spices in a small mixing bowl. Season with salt and stir in 3 tbsp oil to form a paste. Brush this onto the cod fillets and marinate for at least 30 minutes.
    2. Meanwhile, prepare the relish by blitzing all the ingredients with 5 tbsp water in a blender until smooth. Season with salt. Lift the fish fillets onto a hot barbecue and cook for about 5–6 minutes, turning over until cooked through and slightly charred. Drizzle with the remaining olive oil and serve with the relish on the side.
