    Spicy cheese quesadillas

    Serves: 4


    2 tbsp essential Waitrose Vegetable Oil
    1 essential Waitrose Onion, sliced
    1 essential Waitrose Red Pepper, sliced
    400g can essential Waitrose Chopped Tomatoes
    395g can essential Waitrose Red Kidney
    Beans in Chilli Sauce
    320g pack 8 Discovery Soft Corn Tortillas
    100g essential Waitrose
    Medium Cheddar Cheese, grated


    1. Heat 1 tbsp oil in a frying pan and fry the onion and pepper for 4 minutes. Add the tomatoes and cook for 3 minutes. Stir in the kidney beans and cook for 1 minute, then season.

    2. Spoon the mixture over 4 corn tortillas, spreading it to the edges. Sprinkle with cheese and top with the remaining 4 tortillas.

    3. Heat the remaining oil in a clean frying pan and fry 1 quesadilla at a time for 30-45 seconds until golden. Place an upturned plate over the pan, flip over, slide the quesadilla back into the pan and fry for a further 30 seconds. Repeat with the remaining 3 quesadillas.
