    Spicy Mediterranean Chicken

    This is a vibrant lunch or supper dish that tastes just as good with other flavours of cooked chicken from our range. The artichoke hearts can be found on the Deli Counter.

    • For the chicken
    • 3 tbsp mayonnaise
    • ½ tsp Bart Picante Pimentón
    • 190g pack Waitrose Perfectly Balanced Sun-dried Tomato & Olive Oil Roast Chicken Breast Fillets, thinly sliced
    • 2 artichoke hearts, drained and quartered
    • ¼ x 375g jar Peppadew Sweet Mild Spicy Piquante Peppers, drained and sliced
    • ½ pack fresh coriander, chopped
    • ½ lemon, cut into wedges
    • For the couscous
    • 200g couscous
    • ½ tsp Marigold Swiss Vegetable Bouillon Powder (optional)
    • 1 tbsp olive oil


    1. Place the couscous, bouillon powder, if using, and olive oil in a heatproof bowl and pour over 250ml boiling water. Cover with clingfilm and set aside for 10 minutes, or until you are ready to eat (it is good served warm or cold).
    2. Mix the mayonnaise and pimentón in a bowl and then fold in the chicken strips, artichokes and peppadews to coat.
    3. Fluff up the couscous with a fork, season and divide between 2 plates. Arrange the chicken mixture on top, then sprinkle with some chopped coriander. Serve with lemon wedges to squeeze over.
