    Spicy Prawn And Potato Hash

    Ingredients

    • 20g bag fresh coriander
    • 4 tbsp Waitrose Roasted Vegetable Chutney
    • 400g bag frozen Waitrose Ready to Cook King Prawns
    • 2 tsp Belazu Rose Harissa
    • 2 x 400g cans Waitrose Plum Tomatoes
    • 750g scrubbed Charlotte potatoes

    Method

    1. Cut 750g scrubbed Charlotte potatoes into 2cm chunks and cook in a large saucepan of boiling, lightly salted water for 15 minutes. Drain thoroughly, return to the pan, then add 2 x 400g cans Waitrose Plum Tomatoes, 2 tsp Belazu Rose Harissa and season.
    2. Bring to the boil and bubble for 10 minutes or until very thick and pulpy, breaking up the tomatoes with a wooden spoon. Reduce the heat to its lowest setting. Add a 400g bag frozen Waitrose Ready to Cook King Prawns (there’s no need to thaw them first) and 4 tbsp Waitrose Roasted Vegetable Chutney.
    3. Cook gently for 4-5 minutes until the prawns have turned pink. Chop a 20g bag fresh coriander and add half to the pan with the tomato, prawn and potato mixture. Heat through briefly. Serve, scattered with the remaining coriander, with watercress salad.
