    Spicy Roast Potato Cubes

    • Vegetarian


    • 4 King Edward Potatoes
    • 2 tbsp olive oil
    • 1 tsp salt
    • 1/2 tsp smoked paprika
    • 1 tbsp ground cumin


    1. Dice 4 King Edward potatoes into 2cm cubes (don't peel them if you don't want to). Place 2 tbsp olive oil, 1 tsp salt, ½ tsp smoked paprika and 1 tbsp ground cumin in a bowl and stir to combine. Throw in the potatoes and toss to coat thoroughly.
    2. Preheat oven to 200°C, gas mark 6 and roast for 20 minutes or until crisp, removing half way through to give them a stir. Serve hot, sprinkled with sea salt, with cocktail sticks. Serves 8 as a nibble.
