Spicy turkey meatballs

300g Waitrose Basmati Aromatic Rice
500g pack essential Waitrose British Turkey Breast Mince
1 tbsp medium curry powder
2 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Onion, chopped
50g Waitrose Flaked Almonds
200g essential Waitrose Low Fat Natural Yogurt
Lemon wedges and Coriander leaves (optional)
1. Cook the rice in boiling water for 10 - 12 minutes until tender, then drain.
2. Meanwhile, mix the turkey mince, curry powder and seasoning together and mould into 16 small balls. Heat 1 tbsp of oil in a frying pan and fry the meatballs for 15 minutes until cooked throughout, then remove and keep warm.
3. In the same pan heat the remaining oil and fry the onion for 4 minutes, add the almonds and fry for 2 minutes, stir in the rice and heat through. Season to taste, place in a serving dish and top with the meatballs.
4. Take the frying pan off the heat, stir in the yogurt then spoon on the meatballs. Garnish with coriander leaves and a wedge of lemon to squeeze over.
