    Spinach, Bacon and Poached Egg Salad

    Ingredients

    • 2 eggs
    • ½ x 200g pack Waitrose Unsmoked English Lardons
    • ½ x 145g bag Waitrose Watercress, Rocket and Spinach
    • 10 halved baby plum tomatoes
    • A stick of celery
    • A handful of Waitrose Cook's Ingredients Croutons
    • 1 tbsp olive oil
    • 1 tsp white wine vinegar
    • ½ tsp Dijon mustard
