    Spinach, Carrot, Cucumber and Pine Nut Salad

    Add colour and crunch with this speedy salad.

    Serves: 6

    Ingredients

    • ½ x 90g pack Waitrose Cooks' Ingredients Toasted Pine Nuts
    • 100g bag salad spinach
    • ½ cucumber, deseeded and thinly sliced
    • 1 carrot, peeled and grated
    • For the dressing
    • 2 tbsp extra virgin olive oil
    • Juice of 1 orange
    • 1 tsp balsamic vinegar

    Method

    1. In a bowl, toss together the salad ingredients.
    2. Place the dressing ingredients in a small jar or jug, season well and mix thoroughly. Drizzle over the salad, mix again and serve with the chicken and roasted new potatoes.
