    Spinach Salad with Balsamic and Honey Dressing (for 10)

    Serves: 10

    Ingredients

    • 1¼ x 145g bags Waitrose Watercress, Rocket & Spinach Salad
    • 275g baby spinach
    • 10 tbsp extra virgin olive oil
    • 2½ tbsp balsamic vinegar
    • 4 tsp clear honey
    • Toasted pine nuts to serve

    Method

    1. Place the salad and spinach in a salad bowl. Make the dressing by placing the oil, vinegar and honey and seasoning in a small jug.
    2. When ready to serve, whisk the dressing together and toss into the salad. Sprinkle over some pine nuts.

    Cook's tips

    If space is limited in your fridge, buy whole heads of salad such as Romaine or Little Gem or bunches of watercress, as they take up less space.
