    Spring Green, Bacon and Potato Gratin

    • Cooking time: 40 minutes

    Serves: 6

    Ingredients

    • 300 ml essential Waitrose Semi-Skimmed Milk
    • 300ml essential Waitrose Single Cream
    • 2 cloves garlic, crushed
    • 1.2kg King Edward potatoes, peeled and sliced
    • Grated nutmeg
    • 200g pack essential Waitrose British Bacon, 10 Thin Back Rashers
    • 200g spring greens or kale, shredded

    Method

    1. Preheat the oven to 200°C, gas mark 6. Heat the milk and cream in a pan with the garlic and plenty of seasoning until simmering, then add the sliced potatoes. Simmer for 10 minutes, stirring occasionally until just tender. Add a little grated nutmeg.
    2. Meanwhile, grill the bacon until crisp. Cook the greens in boiling water for a minute. Drain, then layer up a third of the potatoes and remaining liquid in a 2 litre ovenproof dish. Top with half the bacon and half the greens. Repeat, finishing with potato. Cook for 25-30 minutes until golden.
