    Spring Vegetables Pies with Stilton Mash

    Serves: 4

    Ingredients

    • 600g floury potatoes, such as Maris Piper peeled and sliced
    • 75g Waitrose rich & creamy blue stilton, crumbled
    • 400g Waitrose frozen peas and bean mix
    • 1 courgette, cut in half lengthways then thinly sliced
    • 300g tub Waitrose chilled parsley sauce

    Method

    1. Preheat the oven to 200°C, gas mark 6. Boil the potatoes for 10-15 minutes, until tender, then drain and return to the pan. Mash with the Stilton until smooth. Season to taste with black pepper and set aside.
    2. Cook the peas and beans according to the pack instructions, then divide with the courgette between 4 x 300ml individual pie or ovenproof dishes and mix to combine.
    3. Spoon the parsley sauce over and season. Spread the mash evenly over the surface of each. Cook for 20 minutes or until crisp and golden. Serve with steamed green beans.
