Intensely salty anchovies work really well as a seasoning for juicy steak. Be warned, though: this is messy, chin-drizzling food and is probably best not eaten in the company of anyone you are trying to impress.
Plenty of fresh fruit and zing is needed for the big flavours. Try Beaujolais.
