    Steamed plum & hoisin sea bass with baby vegetables

    A great dish to prepare ahead. Simply put in the oven when needed. You can substitute cod fillets or king prawns for the sea bass. You can also swap the sauce for others in the Waitrose range. Perfect with noodles or egg fried rice

    • Cooking time: 15 minutes

    Serves: 2

    Ingredients

    150g easy cook long grain rice
    Vegetable oil, for greasing
    200g pack Baby Vegetable Stir Fry
    180g pack 2 sea bass fillets
    140g pack Waitrose Plum & Hoisin Sauce
     

    Method

    1 Preheat the oven to 200°C, gas mark 6.

    2 Cook the rice according to the pack instructions, drain and keep warm. Meanwhile, oil 2 large pieces of foil and divide the baby vegetables between them. Top with the sea bass, flesh side up and drizzle over the plum and hoisin sauce.

    3 Fold in 2 sides of the foil over the fish, then seal the remaining 2 sides to form a parcel. Place on a baking tray and bake for 15 minutes until the fish is just cooked and the vegetables are tender. Serve with the rice, pouring over the cooking juices.
