    Steamed Bouquet of Vegetables

    Presenting your greens like a beautiful bunch of flowers takes a little time and effort, but the results are worth it.

    Serves: 6


    • 1 head broccoli, cut into florets
    • 2 x 200g packs baby courgettes
    • 150g pack trimmed sugar snap peas
    • 150g pack trimmed mangetout
    • 50g butter
    • ½ pack fresh flat-leaf parsley, finely chopped
    • Salt
    • Freshly ground black pepper


    1. Arrange the vegetables in a large steamer basket, starting with the broccoli at the bottom, then adding the courgettes, sugar snap peas and mangetout on top. Place over a pan of simmering water, cover tightly and steam for 5-7 minutes over a high heat. Remove from the heat, stir and keep warm. Take care not to overcook: the vegetables should still have a bright colour and be a little firm.
    2. Place the butter in a small saucepan over a gentle heat until melted. Line a serving bowl with 3 or 4 half-overlapping pieces of baking parchment or greaseproof paper, slightly larger than the dish, with the corners sticking out. Arrange the vegetables in the paper in a bouquet, season, sprinkle with the parsley and drizzle with the butter. Serve immediately.
