    Steamed Custards with Caramelised Apples

    Serves: 4


    • 3 medium eggs
    • 1 teaspoon vanilla extract
    • 300ml cream
    • 200ml milk
    • 3 tablespoons caster sugar
    • Brown sugar
    • 4 small apples, peeled


    1. To make the custards, place the eggs, vanilla extract, cream, milk and caster sugar in a bowl and whisk to combine.
    2. Pour into 4 ramekins or Chinese tea cups and place in a steamer over boiling water. Cover and steam for 5-7 minutes or until the custards are just set. Remove from the heat, sprinkle with a little brown sugar and allow to cool slightly.
    3. Meanwhile, cut the apples in half, press the cut side into the brown sugar, then place sugar-side down in a frying pan over a moderate heat. Cook for 2-3 minutes, or until the sugar has melted and caramelised. Serve with the steamed custards.
