    Steamed Leeks with Goat's Cheese

    Serve this tasty dish as a light lunch or as a starter

    • Cooking time: 10 minutes to 12 minutes
    • Total time: 15 minutes to 17 minutes 20 minutes

    Serves: 2

    Ingredients

    • 1 large leek
    • ½ pack fresh oregano
    • ½ x 100g pack Waitrose Chèvre Blanc, crumbled
    • 1-2 tbsp extra virgin olive oil
    • Freshly ground black pepper

    Method

    1. Trim the leek and cut in half lengthways, then cut each length in half and wash thoroughly. Place in a steamer. Roughly chop the oregano and scatter it over the leeks. Place the steamer over a pan of simmering water, and cover with a tight-fitting lid.
    2. Steam for 10-12 minutes, or until the leeks are just tender. Transfer to a warm serving plate. Scatter with the crumbled cheese and drizzle with olive oil. Season generously with freshly ground black pepper and serve immediately.
