    Sticky pork ribs

    This dish can be prepared in advance if required

    • Preparation time: 15 minutes, plus marinating time
    • Cooking time: 1 hour 30 minutes
    • Total time: 105 minutes, plus marinating time 60 minutes 45 minutes

    Serves: 6

    Ingredients

    • 300ml Fresh apple juice
    • 2 packs essential Waitrose British Pork Rack Of Loin Ribs or 2 packs essential Waitrose British Pork Spare Ribs (about 1kg total in either case)
    • 2 Cloves garlic, crushed
    • 1 tbsp Chopped thyme
    • 1 tbsp White wine or cider vinegar
    • 2 tbsp Black treacle

    Method

    1. Boil the juice rapidly in a small pan for about 15 minutes until reduced by two-thirds, then cool.
    2. Place the ribs in a shallow, ovenproof (non-metallic) dish, cutting each rack in half if easier to fit in the dish. In a small bowl, blend together the garlic, thyme, vinegar and treacle. Season, then blend into the apple juice and spoon over the meat until coated. Cover with clingfilm, chill and leave to marinate for at least 2 hours (or up to 24 hours).
    3. Preheat the oven to 150°C, gas mark 2. Cook the ribs, uncovered, for about 1 hour, basting frequently with the juices in the dish. Prepare and light the barbecue.
    4. To finish, transfer the ribs from the dish onto the barbecue. Cook for about 15 minutes, turning frequently until crisp, and basting with any juices left in the dish. Slice into separate ribs and serve.
