    Stifado (Beef Stew)

    • Preparation time: 30 minutes
    • Cooking time: 90 minutes
    • Total time: 2 hours 60 minutes 60 minutes

    Serves: 6


    • 8 tbsp vegetable oil
    • 1.5kg lean braising steak, cut into 3cm cubes
    • 3 large onions, sliced
    • 2 bay leaves
    • 1 stick cinnamon
    • 125ml malt vinegar


    1. Heat a few tbsp oil in a large frying pan and brown the meat in batches, transferring to a casserole and adding more oil as you go.
    2. When all the meat is golden, add 300ml cold water and 2 tbsp of the cooking oil to the meat in the casserole. Season well. Cover and bring to a gentle simmer.
    3. In the rest of the oil you used for the meat, fry the onions over a moderate heat for 15 minutes, stirring regularly. When golden and tender, transfer to the casserole with the rest of the ingredients.
    4. Partially cover and simmer for 1½ hours over a low heat or until tender. Serve with rice.
