    Stilton Quarterpounders Served with Portabellini Mushrooms

    Chunky home-made beef burgers with melted blue cheese are sandwiched with mushrooms as a tasty alternative to bread.

    • Cooking time: 12 minutes to 14 minutes
    • Total time: 27-29 minutes, plus 20 minutes chilling 50 minutes

    Serves: 4

    Ingredients

    • 500g pack Waitrose Organic Minced Beef
    • 1 small organic onion, finely chopped
    • 1 organic egg yolk
    • ½ x 20g pack fresh organic curly parsley, finely chopped
    • 125g Cropwell Bishop Organic Stilton Best Blue, chopped
    • 8 large organic Portabellini mushrooms (250g pack)
    • 1 tbsp organic olive oil, for brushing
    • 55g bag Waitrose Organic Rocket

    Method

    1. In a large bowl, mix the beef, onion and egg yolk together, then stir in the parsley and about three quarters of the blue cheese. Season well. With wet hands, shape into 4 burgers and chill for 20 minutes
    2. Preheat the grill to a medium setting. Brush the burgers and mushrooms on both sides with a little olive oil. Place on a rack (mushrooms stalk-side down) over a grill pan lined with foil. Grill for 6 minutes then turn the burgers and mushrooms over. Grill for a further 6-8 minutes, until the burgers are thoroughly cooked, the juices run clear and there is no pink meat. For the final minute of cooking time, scatter the remaining Stilton over the mushrooms and grill until it has just melted.
    3. Serve each burger sandwiched between 2 grilled mushrooms, with a handful of rocket, Waitrose Organic Oven Chips and a dollop of Heinz Organic Tomato Ketchup.

    Cook's tips

    The burgers can be made the day before. Cover and chill until ready to cook. Alternatively, make double quantities and open-freeze on a tray lined with greaseproof paper.

    Separate the burgers with waxed paper and place in freezer bags. Freeze for up to 1 month. Defrost thoroughly before cooking.
