    Stir Fried Beef with Noodles

    • Preparation time: 10 minutes, plus marinating
    • Cooking time: 12 minutes

    Serves: 4


    • ¼ Lemon, juice
    • 4 tbsp Oyster sauce
    • 2 tbsp Caster sugar
    • 1 tbsp Cornflour
    • 1 tbsp Sesame oil
    • 4 tbsp Soy sauce
    • 600g Beef rump, cut into strips approx 5cm x 1 cm
    • 3 tbsp Black bean sauce
    • 2 tbsp Sherry
    • 150ml Beef or chicken stock
    • 1 tsp Sugar
    • 300g Egg noodles
    • 3 tsp Groundnut oil
    • 4 Salad onions, cut into 5cm strips
    • 300g Purple sprouting broccoli
    • 2 Green peppers, sliced into strips


    1. In a bowl, mix together the oyster sauce, caster sugar, cornflour, sesame oil and half the soy sauce. Stir in the beef strips; leave covered for 30 minutes to an hour.
    2. Mix the black bean sauce, remaining soy sauce, sherry, stock and sugar and set aside. Cook the noodles according to the packet instructions; drain
    3. Put a wok over a high heat and add 1 tsp groundnut oil. When hot, add half the beef; cook for 1 minute to seal and brown. Remove and set aside. Add 1 tsp more oil, cook the rest of the beef and set aside
    4. Add the remaining oil, salad onions, purple sprouting broccoli and green pepper and cook for 2 minutes, stirring. Stir in the black bean sauce mixture and simmer until thickened slightly. Add the beef and simmer until warmed through. Squeeze over a little lemon juice to taste.
