    Stuffed Dates Drizzled in Chocolate

    Makes: 12


    • 50g plain chocolate
    • 75g ground almonds
    • 40g caster sugar
    • ¼ tsp rosewater
    • 250g Medjool dates


    1. Combine 75g ground almonds and 40g caster sugar in a bowl. Stir in ¼ tsp rosewater and 2½ tsp water. Tip the mixture onto a clean surface and knead until it forms a paste, adding a little extra water if necessary.
    2. Cut a slit along the length of 250g Medjool dates. Remove the stones then fill the dates with almond paste. Place the stuffed dates onto a wire rack.
    3. Melt 50g plain chocolate in a bowl over a pan of simmering water. Drizzle the melted chocolate over the dates and set aside until the chocolate sets.
