    Stuffed Raff Tomatoes

    This recipe contains lightly cooked eggs so is not suitable for the young, pregnant women, the elderly or those with a weak immune system.

    • Preparation time: 10 minutes
    • Cooking time: 40 minutes
    • Total time: 50 minutes 50 minutes

    Serves: 4 as a light meal

    Ingredients

    • 4 raff tomatoes
    • 250g pack Waitrose Microwave Egg Fried Rice
    • Finely chopped parsley
    • 1 medium egg
    • 50g grated Cheddar

    Method

    1. Preheat the oven to 200°C, gas mark 6. Slice the tops from 4 large Raff tomatoes and scoop out the seeds and flesh. Place in a shallow ovenproof dish and season. Prepare a 250g pack Waitrose Microwave Egg Fried Rice, following the pack instructions.
    2. Stir in some finely chopped parsley. Spoon a little rice into the base of each tomato and break a medium egg on top. Season and sprinkle with 50g grated Cheddar and bake for 15-20 minutes, or until the whites are set. Allow to stand for 5-10 minutes, garnish with parsley and serve with the remaining rice or crusty bread.
