    Stuffed Squid and Tomato Kebabs

    Capture the flavour of summer with these tasty seafood kebabs.

    • Preparation time: 40 minutes
    • Cooking time: 10 minutes
    • Total time: 50 minutes 50 minutes

    Makes: 4 skewers


    • 1/2 small red onion, finely chopped
    • 1 tbsp olive oil
    • 2 cloves garlic, crushed
    • 1 red chilli, deseeded and chopped
    • 1/2 pack fresh parsley, chopped
    • 3 tbsp Waitrose Pepper, Olive And Herb Relish
    • 25g fresh white breadcrumbs
    • 12 Waitrose squid
    • 8 English Red Choice Tomatoes, cut in half
    • Salt and freshly ground black pepper


    1. To make the stuffing, fry the onion in 1 tsp olive oil for 3-4 minutes until softened. Stir in the garlic, chilli, parsley, relish, breadcrumbs and seasoning.
    2. Rinse the squid, then remove and reserve the tentacles. Spoon the stuffing into the squid, if necessary cut a 1cm slit down the open end. Thread the tomato, squid and tentacles, alternately onto 4 long metal or wooden skewers. Thread the squid pockets through both ends to secure the stuffing. Brush with the remaining olive oil and season.
    3. Cook the skewers on a prepared barbecue or under a preheated grill for 8-10 minutes, turning frequently, until the squid are opaque and are just cooked.
    4. Serve on a bed of rice tossed in Waitrose Perfectly Balanced Garlic and Herb Dressing.
