    Summer fruits salad

    Serves: 6


    1 orange
    4 whole star anise
    100g caster sugar
    200g redcurrants
    400g strawberries, hulled
    180g blueberries
    Greek yogurt or whipped cream, to serve


    1. Use a small knife to pare away strips of orange zest. Squeeze the juice. Put both in a saucepan with the star anise, sugar and 150ml water. Heat gently until the sugar dissolves. Bring to the boil and boil for 5 minutes until thickened and syrupy. Leave to cool then strain, discarding the strips of orange zest, if you wish.

    2. Pull the redcurrants from the stalks by running them between the tines of a fork. Halve the strawberries and put in a salad bowl with the other fruits. Add the anise syrup and allow to stand for several hours before serving with a dollop of Greek yogurt or whipped cream.
