    Summer Berry Salsa with Chicken

    • Total time: 38 minutes to 40 minutes 40 minutes

    Serves: 4


    • 3 tbsp olive oil
    • 4 essential Waitrose Skinless Chicken Breast Fillets, butterflied
    • Juice of 1 lime
    • 100g strawberries, roughly chopped
    • 100g blueberries
    • 100g raspberries
    • 1 red chilli, finely chopped
    • 1 small red onion, finely diced
    • 1 avocado, finely skinned and flesh diced
    • 20g pack coriander, leaves picked and chopped


    1. Heat a griddle to a medium heat. Brush 2 tbsp olive oil over the butterflied chicken. Season and cook on the griddle for 8-10 minutes turning halfway until thoroughly cooked and there is no pink meat.
    2. Meanwhile, in a large bowl whisk the remaining oil with the lime juice. Season and add the berries to the dressing, along with the remaining ingredients. Serve the griddled chicken with the berry salsa spooned over the top.
