    Summer Berry Skewers

    You can’t beat ripe, juicy summer berries for a delicious and healthy finish.

    • Preparation time: 5 minutes, plus cooling
    • Cooking time: 10 minutes
    • Total time: 15 minutes, plus cooling 15 minutes


    • 450g strawberries, washed and halved
    • 225g blueberries, washed
    • 150g golden caster sugar
    • 1 lime, zest and juice
    • 2cm fresh root ginger, thinly sliced
    • A dash of Cointreau (optional)


    1. Thread the strawberries and blueberries onto cocktail sticks and chill in a container.
    2. Place the sugar in a small pan and cover with 100ml water. Cook over a low heat for 2-3 minutes to allow the sugar to melt. Turn up the heat and allow to simmer and bubble for about 5-8 minutes until sticky. Add the lime, ginger and Cointreau, if using, and allow to infuse as it cools. Transfer to a small container and pour over the fruit to serve.
