    Summer Cocktails

    Cocktails always create a special atmosphere and, if they are quick and simple to prepare, as these are, the sense of occasion is even better for the host as well. Serve them with Blue Diamond Smoke House Almonds and Cape Cod Golden Russet Crisps.

    Serves: Each recipe serves 4

    Ingredients

    • Cherry Berrytini
    • 100g cherries, or a combination of cherries and other berries, with stones and stalks removed
    • 3 cherries to garnish
    • 200ml Stolichnaya Vodka, chilled
    • 100ml De Kuyper Cherry Brandy
    • 100ml freshly squeezed lemon juice
    • De Kuyperinia
    • 200ml Stolichnaya Vodka, chilled
    • 100ml De Kuyper Triple Sec
    • 25ml De Kuyper Apricot Brandy
    • Gin Express
    • 200ml Lichfield Dry Gin
    • 100ml De Kuyper Apricot Brandy
    • 100ml freshly squeezed lemon juice

    Method

    1. Gin Express: This adaptation of a classic gin cocktail combines the flavour of gin with the freshness and ripeness of apricot brandy. Pour all the ingredients into a mixing jug containing several ice cubes. Stir well, then strain into four chilled martini or cocktail glasses. Serve immediately.
    2. De Kuyperinia: Combine the ingredients in a mixing jug with several ice cubes. Stir well, then pour into four chilled martini or cocktail glasses. Serve immediately.
    3. Cherry Berrytini: This cocktail is a wonderful mix of vodka, cherry brandy and lemon juice. Adding fresh fruit gives it a much rounder flavour. Place the fruit and vodka into a mixing jug. Lightly mash the fruit with the back of a spoon to release the juices. In a separate jug, add several ice cubes, the cherry brandy and lemon juice. Stir to mix and strain into the fruit mixture. Stir again, then pour into four chilled martini or cocktail glasses. Garnish with a few cherries. Serve immediately.
