    Summer Fruit Jellies

    The rosé wine gives these adult jellies a magnificent colour, while the summer berries provide an explosion of flavour.

    • Preparation time: 15 minutes, plus cooling
    • Total time: 2 hours 15 minutes 60 minutes 60 minutes 15 minutes

    Serves: 6

    Ingredients

    • 750ml Waitrose Rosé d'Anjou
    • 4 tbsp caster sugar
    • 2 sachets Supercook Gelatine
    • 2 tbsp Waitrose Elderflower Cordial
    • 250g strawberries, hulled
    • 250g raspberries
    • 125g blueberries

    Method

    1. Place half the wine in a saucepan and bring to a simmer. Remove from the heat, sprinkle the sugar and gelatine over and allow to stand for about 10 minutes, or until dissolved.
    2. Stir in the remaining wine and the elderflower cordial. Pour into a jug and allow to cool.
    3. Arrange the fruit in 6 glasses and pour the cooled wine mixture over to cover the fruit. Chill for 2 hours or until set. Serve garnished with a sprig of rosemary, if preferred.
