    Summer Fruit Sundae

    Serves: 6


    • 1 small punnet of strawberries
    • 30ml icing sugar
    • 500g mixed summer fruits
    • Meringue pieces
    • Rhubarb Ice cream
    • crème de cassis


    1. For 6 servings: purée a small punnet of strawberries with 30ml icing sugar. Add 500g mixed summer fruits. Sweeten to taste.
    2. To assemble, place pieces of broken meringue in tall glasses then top with the fruit mixture. Add scoops of Clotted Cream Timperley Rhubarb Ice Cream and drizzle with a little crème de cassis.
