    Summer Sea Salmon

    Easy and quick to prepare, healthy fish dish, can be served with a green salad.

    A dish that is great for a summer evening, healthy, tasty, and without the necessity to spend hours in the hot kitchen!

    • Total time: 10 minutes prep + 25 Minutes cooking

    Serves: 4


    • 15 ml olive oil
      500 gramms Waitrose salmon fillets
      15 ml lime juice
      1 sliced red onion,
      5 ml oregano
      Black course pepper
      black olives
      2 medium chopped tomatoes.
      150 ml Feta cheese
      30 ml fresh parsley


    1. Preheat your oven to 200C/400F. Use a baking dish which is big enough to hold all of the salmon in a single layer. Sprinkle the olive oil over the bottom of the dish, place the salmon in the baking dish, scatter the oregano, lime juice, basil and black pepper evenly over the salmon. Place the olives, tomatoes and onion slices equally over the salmon. Sprinkle on the feta cheese and parsley over the top and cover the dish with foil. Bake in the oven for 15 minutes then take away the foil and bake for a further 10 minutes.
