    Summer seeds and brown rice salad with oriental dressing

    This simple salad which you can personalise with virtually any seeds and dried fruits is a great healthy side dish or accompaniment at a barbecue

    Why should your recipe win?
    I make this salad for almost every party we hold. It keeps really well so I always make extra for lunches during the week, but there is never any left at the end of the party! I have had to write the recipe down so many times for departing guests, that it would be far simpler if I could just direct them to the Waitrose website for it!

    • Total time: 15 minutes prep + 30 minutes cooking

    Serves: 6

    Ingredients

    • Salad:
      200g brown rice
      6 spring onions sliced finely
      1 red pepper diced
      handful of dried cranberries and currants
      handful of roasted cashews
      handful of frozen sweetcorn
      handful of each of sunflower seeds and pine nuts

      Dressing:
      175 ml sunflower oil
      4 tbsp dark soy sauce
      2 tbsp lemon juice
      1 clove garlic
      1 inch fresh ginger

    Method

    1. Cook the brown rice according to instructions. Meanwhile stir the remaining salad ingredients in a large bowl. Drain the brown rice well and mix into the bowl. For the dressing: crush the garlic clove and grate the ginger. Combine all dressing ingredients in a container with secure lid and shake well. Pour dressing over the salad and season to taste. Stir well before serving.
