    Sweet and Sour Chicken with Lychees

    Serves: 4

    Ingredients

    • 500g chicken breast fillets
    • 1 red pepper
    • 1 bunch salad onions
    • 2 tbsp sunflower oil
    • 1/2 a 250ml jar of Wing Yip Sweet and Sour Sauce
    • 3 tbsp water
    • 12 fresh peeled lychees

    Method

    1. Cube 500g chicken breast fillets. Deseed and dice 1 red pepper and roughly chop 1 bunch of salad onions. Heat 2 tbsp sunflower oil in a large frying pan or wok until hot, add the chicken and fry for 5 minutes until lightly browned.
    2. Stir in the pepper and salad onions and cook for 1 minute. Stir in half a 250ml jar of Wing Yip Sweet and Sour Sauce and 3 tbsp water and stir well. Bring to a simmer, cover and cook for 4-5 minutes, until the chicken is tender. Stir in 12 fresh, peeled lychees and serve immediately with rice.
