Sweet potato, broccoli and feta frittata

1 tbsp essential Waitrose olive oil
1 essential Waitrose red onion, sliced
3 essential Waitrose sweet potatoes, peeled and coarsely grated
1 garlic clove, crushed
2 tsp thyme leaves
1 essential Waitrose broccoli, cut into small florets
75g essential Waitrose greek feta, cut into small cubes

1. Preheat the grill to high. Heat the olive oil in a medium, non-stick frying pan over a medium heat. Add the onion and cook for 2 minutes. Add the sweet potato and cook, stirring, for a further 5 minutes, until softened. Stir in the garlic and thyme leaves and cook for a fi nal minute.
2. Meanwhile, boil the broccoli in water for 3 minutes, until al dente. Drain and stir into the potato mixture along with the feta. Beat the eggs with 3 tbsp water, season and pour into the pan. Lower the heat and cook for 10-15 minutes until the frittata is almost set.
3. Place the pan under the hot grill for 2-3 minutes, until golden and set. Serve with a green salad.
