    Sweet Potato Pancakes

    Makes: 16

    Ingredients

    • Freshly ground black pepper
    • 680g sweet potatoes, peeled and roughly grated
    • 1 onion, roughly grated
    • 1 egg, beaten
    • 1 tablespoon plain flour
    • Salt
    • Olive oil

    Method

    1. Preheat the oven to 150°C/gas 2. Mix the grated potatoes, onion, egg and flour. Season. Set a non-stick frying pan over a medium heat. Once hot, add 3 tablespoons olive oil and spoon in 3 small blobs of potato mix. Flatten with a spatula to form thin, round cakes.
    2. Fry for about 2 minutes or until golden and set, then flip and continue to cook for 2 minutes. Once they are crisp, transfer to a non-stick baking sheet and place in the oven.
    3. Cook the remaining mixture, adding more oil to the pan as you go. Once finished, leave in the oven for 10 minutes to ensure the cakes are cooked through. Serve piping hot.
