    Sweet Potato Peanut Cakes

    • Preparation time: 20 minutes
    • Cooking time: 10 minutes
    • Total time: 30 minutes 30 minutes

    Makes: 10 - 12


    • 500g sweet potatoes, peeled and grated
    • 200g roasted, unsalted peanuts, chopped very finely
    • 2 bunches spring onions, trimmed and chopped
    • 70g butter, melted
    • 1 medium egg, beaten
    • 2 tbsp plain flour
    • Salt
    • Freshly ground black pepper
    • Vegetable oil for frying
    • Crème fraîche, to serve


    1. Put the grated potatoes, peanuts, spring onions, melted butter and beaten egg into a large bowl. Stir, sprinkle over the flour, season and mix well. With wet hands, mould the mix into cakes, about 8cm across.
    2. Heat the oil, to a depth of about 3cm, in a large frying pan over a medium heat. Fry the cakes for 5 minutes or so each side until golden. Drain on kitchen paper.
    3. Serve hot or cold, topped with a dollop of crème fraîche and some mushroom compote.
