Taleggio panna cotta with strawberries and Asti Martini

The fruity tang of the Taleggio and the sweetness of the Asti add a unique flavour to this classic dessert.

    • Preparation time: 10 minutes, plus setting time
    • Cooking time: 5 minutes
    • Total time: 15 minutes, plus setting time 15 minutes

    Serves: 2

    • 150ml essential Waitrose Whipping Cream
    • ½ tsp Vanilla sugar
    • 35g Taleggio cheese, ring removed, diced
    • 1½ Sheets of quick-dissolving Costa Fine Leaf Gelatine
    • 150g essential Waitrose Strawberries, quartered and lightly crushed
    • 100ml Asti NV Martini, Italy

    1. Warm the cream in a heavy-based pan, then over a gentle heat add the sugar with the cheese, and warm until melted.
    2. Meanwhile, soak the gelatine as per pack instructions. Then, add the gelatine to the pan and stir until dissolved.
    3. Pour the mixture into 2 small moulds or 100ml pots and place in the fridge to set.
    4. Meanwhile, soak the strawberries in the Asti Martini. When the desserts have set, turn them out from the moulds and serve with the soaked strawberries, pouring a splash of Asti Martini over the strawberries to serve.

    Drinks recommendation

Asti NV Martini, Italy is ideal with fruity desserts, and strawberries in particular.
This soft medium-dry fizz is full of pear and grape flavours, but is not too sweet, which complements the slightly savoury, creamy
    panna cotta.
