Ingredients
40g sliced white bread
200g smoked cod's roe
200ml olive oil
2 ½ tablespoons lemon juice
50ml warm water
Method
Cut the crusts from the bread and soak the slices briefly in water, then squeeze until almost dry. Skin the roe and break into chunks. Put the bread and roe in a bowl and use a hand-held mixer or wooden spoon to amalgamate them, adding the oil gradually as you go.
Start slowly, building up speed little by little. When most of the oil is added, add the lemon juice, then the water, little by little to create a smooth, creamy mix. If it's stiff, add more water.
