    Tarator (Tahini Sauce)

    Serves: 8


    • 2 cloves garlic
    • ½ tsp fine salt
    • 8 tbsp tahini
    • 4 tbsp lemon juice
    • Pinch cayenne pepper
    • Chopped parsley, to serve
    • Olive oil, to serve


    1. Pound the garlic and salt in a pestle and mortar to a paste. Transfer to a bowl. Whisk in the tahini, then the lemon juice. The mix will look curdled but don't worry.
    2. Whisk in enough water to create a thick sauce (6-8 tbsp). Add cayenne and salt to taste, top with parsley and a drizzle of oil and serve.
